COFFEE & MUSHROOM RISOTTO
Ingredienti
  • 250g RISO GALLO Traditional Risotto Rice
  • 70ml 2 Coffee shots
  • 400g Mushrooms of choice
  • 200g Parmesan cheese
  • tbsp Lemon juice
  • Chives
  • 50g Butter
  • 556ml Vegetable stock
  • 100ml Sour cream to taste
Preparazione

Prepare vegetable stock and blend a shot of the coffee into the mixture. Make risotto rice and add other shot of coffee during preparation. Sautée mushrooms and season to taste, set a few aside for garnish. Add to risotto rice along with parmesan cheese, chives, lemon juice and butter.

When risotto is cooked plate and garnish with mushrooms and sour cream as required. Serve.
